Preparation
Boil 3 litres of water, add all the stewed vegetables. peeled, then the bouquet garni, an onion pricked with a clove, garlic, salt, pepper and then the stewed meat. Cook it all during about 2:30 - 3:00, skim from time to time. 1h before the end, add marrow bones, and put coarse salt on the ends to preserve the marrow. Drain the vegetables and meat, and serve hot with mustard.
