Preparation

In a bowl, mix an egg yolk with mustard and a nice pinch of salt. Gradually pour in olive oil, whisking vigorously until you get the texture of a mayonnaise. Sprinkle the garlic then mix again, put the garlic in the fridge for 2 hours and it's ready! Quick and easy, it goes well with fish soup, seafood and meats.
