Pea, Mint & Feta Dip

Ingrédients
1 serving of fresh or frozen peas
Une poignée fresh mint leaves
(about 100 g) Feta
1 a drizzle of lemon juice
1 Table spoon Vegetable Oil (Sesame, Olive, Walnut)
Préparation

Cook the peas (if using fresh or frozen) for 3 to 5 minutes in boiling water or steam them.

In a blender, add: peas, feta, mint, lemon juice, lemon rosemary salt, Espelette pepper, and the oil of your choice.

Blend until smooth (or slightly coarse for a more rustic texture). Taste and adjust the seasoning if needed.

To enjoy with:

– Warm slices of toasted bread

– Fresh market vegetables (carrots, radishes, cucumber…)

– Or as a side to grilled fish, in a seaside market style


Provence d’Antan’s tip: Lemon rosemary salt enhances the freshness of the mint and makes the peas sing like at the Aix market. Just a pinch is enough to give your dip real character!
