Parmesan Herb Crisps
In a mixing bowl, gently combine the Parmesan with the spices of your choice. Adjust the quantities to suit your taste – the balance between the heat of the chili and the softness of the herbs is key.
Heat a non-stick pan over medium heat, without adding any fat or oil.
Using a spoon, place small mounds of the spiced Parmesan in the pan, spacing them well apart. Gently flatten them to give them a chip-like shape.
Let them melt slowly until the edges begin to turn golden. You can gently flip them, or even roll them while still warm around the handle of a wooden spoon for a “stick” effect – perfect for elegant appetizers.
Place them on parchment paper and let them cool for a few minutes… Then enjoy!
Perfect as an aperitif, paired with a glass of chilled white wine or homemade lemonade, these crispy chips are a true tribute to the flavors of Provence.
